The challenge we have found with 'Fresh Lime Juice' is it stains the Polycarbonate Glasses (hard plastic) we use. Do the bottle versions still impact the plastic glasses like this? Not sure how to overcome this problem at our bar and whether we can removed the citrus damage? We cannot use glass at our venue! Look forward to your wisdom. Gary

Yep, more ice chills the drink without melting as much as lesser ice. But if you use less ice, people clearly see the amount that they paid, an it is miserable. Why don't put all the liquor in the freezer if it is all about chilling. It is about deceptive packaging. That's why I love beer when im out. They sell it by volume and if it's strong enough, it probably has higher abv than most fancy cocktails

Hi Steve. I know you like to say rum fashioned rather than rum old fashioned, and that's fine, but rum old fashioned is definitely the correct vernacular. People think that an old fashioned is by default a whiskey cocktail, and using other spirits is a variation of that, but this is not true. In the 1800s, when the drink was invented, every spirit was used for old fashioneds. So technically, we should be saying whiskey old fashioned, rum old fashioned, brandy old fashioned, etc. That said, you do you, call the drink whatever you prefer. I doubt anyone really minds.

Hi Steve, tonight I had a fresh blood orange and in my notebook had a recipe for the Blood Orange. I made it to the noted spec except the blood orange juice was 4 x the measure. So the Cointreau, Lime juice Tequila and Agave syrup all proportioned up. Big shake with lots of big ice, will last me all evening! Nick from York

I love your cocktails! Ok, tbh I haven't tried one yet xD BUT they look so original, different but still simple. It seems like you don't care if the cocktail is slightly too sweet, slightly too boozy. And I love that. Cocktails don't have to be perfectly balanced to be delicious.
