This “trattoria” of Piazza Rosa has become the “birthplace of fettuccine all’Alfredo”. More specifically, as is well known to many people who love the “fettuccine all’Alfredo", this famous dish in the world was invented by Alfredo Di Lelio concerned about the lack of appetite of his wife Ines, who was pregnant with my father Armando (born February 26, 1908). I've never found prō″və-lō′nē very tasty but I'll go along with mozzarella and Pepper Jack. Pepper Jack is a must. I'd love to know the olive oil, red wine vinegar, and black pepper measurements.

Linguine with clam sauce is one of my very favorite Italian dishes. I usually prefer the white sauce but yours looks so good I could probably be a permanent red sauce convert. And I always put cheese on mine too! Never understand this BS about no cheese with seafood. Look at dishes like oysters Rockefeller, lobster thermidor, and, of course, Filet-O-Fish - all made with cheese.

That’s what my Grandmother always used in this recipe. It’s essentially just puréed tomatoes. It’s really a wonderful recipe. Give it a try. Use the puréed tomatoes of your choice. 🍅🍅🍅

This is exactly how I make my sausage, peppers, and onions but with one difference: after I cook mine for about 2 hours and stir, I lower the oven temperature and bake it for another 1-1/2 to 2 hours. I also like to serve it on fresh store-baked sub rolls with sharp sliced provolone cheese.
