For some cases it is needed. If load is given (magnitude doesnot matter, only direction is needed) then you should consider the direction of load, eg. In a beam vertical load is acting then its reaction and equilibrium equation will come accordingly. And if load is not given then you have to consider general case ( considering load in all direction) for that no. of equilibrium equation will be different.

Yes. U r missing concept of extensible and inextensible member. If members are extensible then 3 dof and if inextensible then 2 dof.

Just notice that If "ALL" the external reactions are concurrent or parallel, then only the structure will become instable externally. But in this example, you can see all 3 reactions are not parallel neither concurrent. So it is externally stable. For the given truss system if you replace one side hinge support to roller support then it will 2 reactions ..both will be parallel to each other then structure will become unstable externally.
