Looks tasty but waaaay too much liquid. Been making potjies for 25 years. You need to reduce that liquid. Make it a bit thicker by adding maybe a brown onion soup or mutton soup or something similar. Also there was no red wine. Anyways. Each to their own but I would not like so much liquid in my potjie.

Fry it in the pot you'll be cooking in, because the rendered fat is an important ingredient.

I'm from South Africa and I've made this chicken curry in a potjie pot on an open fire while on a fishing trip. This food is just amazing, and I recommend you try it. My take is to top the curry with some Mrs Balls apricot chutney. This is so tasty!!!

We made it with your recipe and it came out very good. I was just wondering if the herb mix you are using it's a traditional blend that goes well with the other ingredients or what kind of herbs is actually in the mix? I live in USA and I can find all kinds of mixes but wouldn't want to use Italian herbs mix for example if it doesn't go well with this recipe.
