Hey there. Love the vid. Made me understand the difference between dry and high tannins. I realise now that I don't like stringent tannins like in shiraz, but I don't mind dry if it's low tannin like southern italian wines. Mind explaining what all these "wine-folks" mean when they mention all these different fruits? Are they code-words, like it is with coffee? I'm trying to get into wine, coming from a barista past, so I'm trying to decode the taste descriptors. I understand oaky, tobacco, buttery, vanilla and sometimes blackcurrant, but what about all the different types of red fruits being used?

Absolutely, Gouda has a great smokey nuttiness that will be delicious with this wine. This wine also works with funky blue and ripened cheeses.
