I was at a party once and they made roasted Greek salad. No cucumbers, zucchini instead(I 🤔) it was fantastic. I have tried to replicate it many times, have never been successful. Maybe roasted potatoes Greek salad would be 😊 or not . 🤷♀️. I am going to try her salad, love fresh dill. Be happy, healthy and safe 👍🙏❤️🇨🇦

@@LisaArmstrong-s9f I found this recipe for a roasted Greek salad. It has cucumbers in it but, you could always sub them out and put in zucchini that roasts along with the cherry tomatoes and feta. Hopefully this approximates the one you had at the party! Bon appetit and be safe tooooooo!
