Are you sure? I think benzoat works effectively on above of pH 6.5. Meanwhile normal yoghurt pH range is 3.8 - 4.5. CMIIW

Please gelatin is used to keep the yogurt thickness at bay as for culture suitable for Greek yogurt every details you will ever need for making yogurt for your use or go commercial is all in my ebook, I believe I shared enough. It can be densed if you don't cream your butter and sugar to become fluffy, doubled or triple in size and after baking cover it while it's still hot to lock in the moisture if not it will dry out

Hello ma'am, thank you for sharing. The video was quite explanatory. Thank you. The way you speak sounds like one from "Pete Edochie's" era. They spoke a lot of oral English.
