Personally i believe that luffy would win do to his gear five abilities, mainly the fact that luffy has shown the ability to creat objects suggesting that he could turn infinity into rubber and then slice it with a sword. Also the true power is to change one’s environment there for he could just have infinity ripped off Gojo’s body. At the end of the day though that is my opinion that could just be lack of knowledge on my part
