@@yasmeennajmi Thank you for watching, you could use ground spice if you prefer. As a spice lover I prefer to leave in the spice in as they would continue to infuse into the jam long after making the jam.

Thank you for this yummy recipe! Can this be kept on the counter? If not, When does it need to be refrigerated after the first week? I guess if it were canned in a water bath or pressure cooker, the heat would kill the good bacteria, right? I like the speed of your video: Every detail is very clear for the beginner ! 💕

Thank you for watching. If you live in a warm country you can leave it on the counter for a week and longer if in a cold climate. The jar of fermented carrots can remain on the kitchen counter away from sunlight for weeks as long as it's unopened. Once opened it needs to be refrigerated. You are right, if you do a hot water bath or pressure cooking canning it will get rid of all the good bacteria.

I have never canned before and after watching almost 2 hours worth of videos I had almost given up hope of learning. Zizzi your method is simple and easy to understand. I am in Tennessee and the wild persimmons are starting to fall, they are the size of golf balls and jave huge seeds but they taste amazing. Thank you for your video.

was the initial water for rinsing or for soaking? also you mentioned leaving them in a dark place, how often should that be done and should it be in a dark dry place or cool? lastly, how often do I rinse them and how do i store them after each rinse?

The initial water was for soaking for 24 hours then I rinsed it everyday (morning and evening) until it was ready. I placed the jar at a corner on my counter with little to no light exposure. By day 6, I kept the jar on the window to get some natural light and also to help with photosynthesis (to help the sprouts turn green) and increase nutrients.

Carrots could sometimes be dry but you could add a little bit of water after grating them and adding salt to create enough brine.

Thank you for your comment. You would need salt to ferment any type of vegetable. Salt helps to control the growth of unwanted bacteria and keeps the vegetable fresh with the nutrients intact. You could try pickling your vegetables if you do not want to use salt, although with pickling, you would need vinegar . I have a few videos on how to pickle vegetables, you can check them out.
