I just smoked 12 turkey legs last week I did a 3 day brine….. they turned out ok. My temps were to high so they cooked to fast. So i didn’t have a Smokey enough flavor…. I can only get better

I don't understand those folks who say "Authentic " chili dosen't have beans. Or DO have beans but mo meat. Some say it's not Authentic if there is any tomatoes in the chli. Authentic is way to over rated. Rule #1- does it taste good? Does it taste GREAT? That's all that matters. 🌶🌶🌶

Towards the end when there are less pellets in the hopper to mask the sound of the auger working it will sound like it's grinding. My Traeger does the same thing.

Now that I think about it I'm not sure I've filmed a turkey leg cook before. I have done them 2 or 3 legs but never filmed it I guess. Thanks for watching and commenting. Interesting. I've been smoking turkeys for over 30 years whole. But I've never smoked turkeys in peices. I've thought about it but just haven't. And I do honestly think it would be a better method to cook the individual peices to their best. So maybe I'll pull a turkey out of the freezer and do that. Fyi I'll be watching the editing video this afternoon. I wonder what I should do the cook on? A offset or a Webber Smoky Mountain? Perhaps a Webber kettle? What to do, what to do? @SDSBBQs Hmmm? Run two smokers at one time! Oh how easy for you to suggest such a thing! The ting is it's a interesting idea. I like doing "Test kitchen " types of cooking. It's one thing to know what "should " be the results. But sometimes the results are far from what you think they should be. It's one of the reasons I have multiple cookers of the same make and model. I'll think about that idea. A offset vs a WSM. Two different types of smokers. I'm not sure if I currently have enough log splits for the offset and I don't think it would be a good comparison if I used charcoal or briquettes in the offset. Different cookers using the fuel that best suits the cookers. Good idea. 🤔

I will say a lot of the turkey legs you get at fairs etc. Are cooked well over 195°. That's why they can use them, tap them on the board and just fall off the bone. In my opinion that is overcooked but people like it

Yes, Dash… I watched all the way to the end! 😂 This is the first time I’ve seen Corel VideoStudio in action. As a decades long user user of CorelDraw and CorelPhoto Paint, I can see similarities in the Corel user layout. I’ve been a “Premiere” user, recently switching to “ResolveStudio”. I always say… use the tools you are most comfortable with. It is interesting to see the different ways various software companies approach the same processes in different ways. Editing is a hate or love proposition. Personally, I think editing is the most fun part of creating videos! With that said, I always have the “edit” in mind DURING the camera recording. If you have a good idea of your cuts and transitions, it makes editing easier and smoother in the end. Dash, I think you did an excellent job showing us just how much work goes into producing a “free to watch” video. Well done my friend! 👏👏👏

Yes indeed editing is a daunting task for sure. I always film to the edit and not the other way round. In the beginning I used to film everything but now I only film what I need to to make the edit easier. But it still doesn't always work out. Thanks for doing this experiment so I don't have to. I would have never tried this on a rotisserie. I've got a charcoal ring with ceramic diffuser plate and it does pulled pork pretty well. Your BGE probably would have been the best choice but we wouldn't have got this interesting video 👍🏾

So I can't remember if I had the BGE at the time of this filming. But I can tell you that I am not a fan of longer cooks on the BGE because the grease drips on the diverter plate and it creates a burnt grease smell that I am not a fan of.
