You aren't doing anything wrong. Mobs will spawn during the night. It's just not as likely if you light up the area well enough.

Clay blobs can be smelted into bricks. If you combine 4 blobs together you get terracotta and you can dye it any color. You can also glaze the terracotta to add designs. Gravel can be added to sand to make concrete powder, then you add water and make concrete blocks.

I want to do something like that. I gathered up some granite and diorite and I want to make something with the polished versions of those. I love all the creating we can do!

Fyi, creepers will avoid cats so if you can befriend a cat or a few and sit them around your place they'll keep creepers away

You'll need iron to get that emerald. If you break it with a stone pick it won't give you anything.

Llamas will spawn typically in a Savannah biome. Also the noise you heard was the llama spitting lol.

The wool does all have to match but you can always dye them whatever color you want so they match.

I can't believe I didn't know about dying the sheep and then they'd have that color wool all the time. I learned it when I saw you dye one of yours green (I think). Anyway, I now have a yellow one because of that! :)

If you go into the advanced where you have the template and stuff, there is a toggle to give you a beginner chest that will usually give you some wood and basic tools.
