Hi, if you are using the Tin ones sometimes it the brand so are really soft. Try to avoid lots of stirring and use a fork. If you using the fresh ackee try not to overcook them. Fry up u Your seasoning first add ackee last and stir slightly.

I remove the shell and leave the head because I personally love the head but you can remove it
