How long did you have to bake them? And didnt they get super dry the next day?

Around 15-16 minutes was the bake time for this size. They did not get dry the next day. Slightly higher butter content along with half & half ratio of AP to barley flour prevents any dryness.

Nice, I use the dutch oven too, being able to cover it for a portion of the bake makes an extremely crunchy crust.

Scales rock. I like to use volume to measure flour every once in awhile to again realize how much more inconsistent it is compared to using mass as a measure. My junior high science class taught me this.

The crema isn't exactly white, its just a lighter brown than the rest of the espresso. Crema is made up of mostly gas that is released from the grounds through the high pressure environment within the grouphead. It will always be lighter in color than the liquid espresso, and especially so when using lighter roasts.

If you roast the bones before you boil them, you’ll have chicken bone broth. A deeper flavor and more marrow extraction.

The carcasses in this video did come from oven roasted whole chickens. I find the flavor to punch through follow up recipes much better with this method.

@@thesilentchef yes… after removing the meat, roasting the bones for just a few minutes before boiling will help with marrow extraction.
