No, you don't need gas. You can use a generator or a wind turbine. The pacer couldn't be grinded because it gestates. It doesn't lay eggs. (That's not the case for all mammals the ovis can be grinded, but imo not worth). You don't have to walk them into the grinder either, you can set up a breeding area above it so the eggs drop down and when hatched the babies are ground up. The amount of resources you get are based on the dinos level. The grind range is 1 wall high, but its not accurate at all times. If you set up a breeding group above the grinder put a row of ceilings 1 quarter wall high over rhe grinder. Otherwise dinos hatching will occasionally mesh into the ginded and won't be ground up. Tek parasaurs are the best imo as they have a short breeding/hatching cycle, then tek stegos (i haven't tested tek trikes) then yuties. Two honorable mentions would be penguins (poly) and mantis (chitin + poly).
