You never know, perhaps you can get the proper ingredients in the big easy. It is not about perfecting the recipe. It is all about the ingredients. A steak is easy to make. 1. Shaved ribeye. I found my source. This is the key 2. Amorosso rolls or better. Liscio's is better. Amorosso's are very good. 3. Mushrooms 4. Onions 5. American Cheese or Provolone cheese. I used land of lakes white American cheese and Happy Farms provolone from Aldi. The only better American cheese I know about is New Yorker. 6. Salt and pepper 1. Sautee the Mushrooms and Onions. There is no rush. If it is wildly sizzling, you are going too fast. 2. Don't eat all of the cheese 3. Get the pan ready for the shaved rib eye steak. This will not take long. 4. Once the shrooms and onions are almost done it is time for the shaved rib eye 5. There is no need to cook it fast. work with the steak, breaking it up, then as it browns add salt and pepper and then the American cheese. Steak that breaks up with a few waves of the spatula is the key to happiness. 6. These four ingredients are blended until the cheese disappears. six slices of cheese for 12 ounces of steak. 7. The rolls are not ready until they have been lightly toasted. Best to shovel the ingredients on to the roll then into the toaster for a quick warming/mild toasting. There is nothing more to it. It tasted great, even though we used the SAME KITCHEN where we used to make steak um cheesesteaks once a week or so as kids. It is all about the fat in the steak and the fresh ingredients. Fat steak costs more. The provolone cheese was for eating, while you cook if you missed that part. Cheese whiz was never part of the cheese steak until someone had a bad idea. Juicy, fresh bread heated and a little toasted, tasty steak, lathered with cheese, mushrooms, onions, salt and pepper. Put the salt on LATE, that will bring out the juiciness without drying it out. That makes two Amorosso roll sized steak sandwiches. The steaks were better than all but the top two or three steaks in Philly. They were better than just about all of the steaks you can buy. Once I found the steak source, a current secret, I was golden. It is all about the ingredients. If you want a dry steak get steakums or some other cut of steak. Fat is flavor and juiciness.
