Hello, I wanted to ask about how long should we boil it for. Is it until the gelatin is dissolved?

Hello, yes, you should boil it until the gelatin is fully disolved and all the ingredients are mixed. No, the chocolate glaze no need of freeze, let it sit at temperature room a couple of minutes before adding over the dessert 😊
