Start with better tequila. Something with no additives. Arette or Tapatio for example are inexpensive and far superior. Check out: Taste Tequila, additive free.

Just a pinch of Xanthan Gum would stop these drinks from separating. It is cheap and makes a big difference.

Episode Notes: A Piña Colada is traditionally made with light rum, so I used my favorite light rum for this, Probitas White Blended Rum. However, I have seen Piña Coladas made with every kind of rum under the sun, so feel free to experiment or use whatever rum you have on hand. Same goes for the other pineapple/rum drinks (Blue Hawaiian, Bahama Mama). The Mudslide, Strawberry Daiquiri, and Margarita have slightly less flexibility. As mentioned in the video, cream of coconut is not the same as coconut cream. It is also not the same as coconut milk. As you can see in the video, I was having trouble with the ice sticking to the metal tin. It’s better to use a plastic measuring cup once you figure out your ice to liquid ratio. With the crushed ice that I was using in this video, a 3:1 ratio works great. So, 3 ounces of crushed ice per 1 ounce of liquid. I use all fresh ingredients, including fresh pineapple juice. To juice a pineapple, I cut off the rind, then cut the fruit into chunks and blend it. Then, strain the blended pineapple into a bowl. It’s worth the effort to use a fresh pineapple, but if you want to use store-bought pineapple juice, I recommend Trader Joe’s Cold Pressed Pineapple Juice. You can make different flavors of frozen daiquiris by swapping the 1 cup of strawberries for 1 cup of other fruits, like banana, mango or watermelon. Similarly, the Margarita can be made a flavored Margarita by adding a cup of fruit. Some popular choices are mango and strawberry. My 1 cup of strawberries for the strawberry daiquiri was slightly too full - try to keep it to 1 cup of fruit for the best ratio.
