Using a towel under the board may be illegal somewhere in the world, but in most places it is not because it does not contact the food. An example of differing laws (between EU and US) is that cheese less than 6 months old MUST be made from pasteurized milk. Older cheeses may be made from either pasteurized OR raw milk .
