I do the same thing but I stuff it first and bake it all together. Any filling works.

@@pepperucci Making stuffed legs today. Got some huge chicken 🍗🍗🍗's, almost 1/2 pound each. I pull the meat and skin back and cut the bone near the bottom. Just using plain bread stuffing tonight. Sometimes I use Italian sausage and make it Catciatore style.

@@pepperucci Thanks, it's easier with a whole leg and thigh. The extra skin on the thigh is good for wrapping up the chicken. Less chance of leakage. I also leave the breast on the bone and peel back the skin and put slices in the breast crossways and stuff the openings. Gotta leave the skin on for that. Easy but pan/shallow frying is annoying. The oil splatters etc.
