A first rise won’t over proof. Second rises can certainly over proof if left too long so you just have to keep an eye on it. And of course the temperature of your house matters a lot too.

An easy way to wash the butter is to put cold water into the processor and clean the butter using that tool. you can also salt the butter after draining the water after it's clean.

You can with some understanding: honey is considered a liquid and will need to slightly adjust the amount of other liquid in the recipe. Honey also causes bread to darken faster when baking. Butter can be used but solid fats make bread a bit drier and crumblier. If you don’t mind those things, feel free to make the swaps.

Hi! I have made this now a few times and it is absolutely wonderful so thank you for this recipe! The only issue I have found in running into a couple times after letting it set for a couple hours to cool and cutting into it my crust will be slightly separated from the crumb 😕: after watching some other videos about that it seems to be over proofed possibly? Wanted to see if that’s ever happened to you and what the remedy may be!

I’ve always known this to be a shaping issue but the experts at The Perfect Loaf say it’s an UNDER proofing issue. It could be both. I’ve had it happen only a time or two over the years and I tend to think it’s probably a shaping issue more than anything.

Research “flying crust”. If the whole crust was lifting off that’s what they call it. If it was just in spots but not the whole top crust you could have just had an air bubble that formed at the top. I still vote it’s an under proofing issue but make sure to roll your dough well before starting those pulls toward you and pop any air bubbles if you see them.

I am 87 years old and learning to bake bread. Every loaf I make is a little bit better. My problem is the bread is too dense ---- it looks good & tastes good but to bread is just too "dense." Nope. Refrigerators dehydrate bread. It will be a hard brick in under 24 hours.

Maybe but the ferment will need something to help feed it and it may not rise as well. Sugar also supports moisture and structure. You could do honey if you prefer.
