Here is a wild theory. They are lonely. They are super inteligent lifes, fully conscious like us, and they are surrounded by fish or more primitive species. And then once in a while, they encounter someone in whom they recognize that same spark of inteligence, and it makes them feel less lonely. What's strange with the mammal eating Orcas is that, they eat Dolphin and Whale. So they have no intelligence taboo or cannibalism taboo apart from other Orcas and humans.

How would an Orca know whether humans taste good or not without samoling some?

well its not only about EATING! Orcas are known for killing seals and dolphines for fun.. so why are they not killing any human for fun? So you cant just think of it as "We taste bad" Its more to it than that

they have extreme intelligence is why and we will never realise just how smart they are. They know the repercussions of their actions against us and that we pose a bigger threat to them, then they us. They see our boats, they see our fishing, they see our diving equipment and our toys like jet skis and paddle boards. They know that we were are capable of. They only attack in captivity because they are locked up and made to perform. Many humans would do the same and you cant blame them. Dolphins and octopus are also very intelligent. Tilikum was an exception because he mistreated and suffered psychological issues. Humans kill other humans and we never call humans "dangerous." Most Orcas never harm humans.
