I was looking at your recipe for black beans on the net. I noticed that you did not salt the beans until the beans were tender. In your recipe for the Mexican pinto beans in the slow cooker you salted the Sofrito. Then you you added the mixture to the beans and cooked it in the slow cooker. When you make beans, do you salt, the beans or not. Thank you

Great question! Over the years I've gone back and forth on which method is best, but I now add salt to the beans while they are cooking. I've tested this again and again and the salt doesn't affect their tenderness and adds more flavor.

Pinto beans and black beans are my favorite. If I want to put the black beans in the slow cooker, would I do it exactly the same way as a pinto beans? I know that the black beans are smaller than the pinto beans: so would I use the same amount of water or would I use a little bit less? Thank you so much for your previous reply.
