Everyone has their own style, some make it look easy, some make it look scary as if the finger is about to get the finger chipped, you might have lot of practice, that's how you are able to do it safely. Please watch other such videos (of professionals) to see how they put their left hand (that holds the cabbage ) such that fingers are pointing down and away from the chopping knife's edge, your first finger's knuckle should be touching upper knife sides, it looks scary to watch you cut, that you are about to chip off your fingers (please watch this video to get an idea kzbin.info/www/bejne/qWHcpoaObtZpaLs to get an idea)

No, there is no recipe. A recipe consists of how much of each item you are using and what items are in it along with how long to cook it and at what temp. You have NONE OF THAT.
