Excellent DIY video on sharpening with a whetstone. I have a couple of whetstones and have worked at sharpening but there is no way I can depend on my pinkie to get the exact angle. I’m a tiny woman of 105 pounds and no way is my pinkie big enough to achieve the ideal angle. And even then I suspect it takes years of experience to keep the knife at the same angle throughout the sharpening process. I do have a couple of metal devices of the proper angle that I can slide on the back of a knife which helps to maintain a proper angle but it doesn’t make it easy to do the entire length of the blade. So I e sent my Shun knives to Shun for a free sharpening. They use giant whetstones on a sheet to sharpen knives but in my experience they don’t get the knives nearly as sharp as new. So I feel quite frustrated, feeling I’m not doing the sharpening job just right.

FWIW: I have rarely had to sharpen my Shun knives. Mostly they needed honing. I usually try that 1st.

I purchased six Shun knives last year. One was sharp. The other five were very dull, right out of the packaging. They are pretty but they fail in the kitchen. Don't waste your money. They are fancy junk...

When he turned the meat and scored it "in the opposite direction", was the intent to have a cross-hatch score? Because by turning *and* changing direction, you end up scoring the same direction - the two actions cancel out! I had to try on a piece of paper then hold it up to the light to see for myself!

This sounds like similar performance to your VG10 /VGMAX core knives but just MORE fragile and likely to break. Why not have the softer cladding as it make the knife BETTER, removing it just makes the knife prettier.

if you can bite it you can cut with it. I would avoid hard skinned vegetables (pumpkin, etc.). Never bones, anything frozen, etc. Read about how to use japanese knives (cutting technique and you'll be fine).@@wsams.

For a my set of high end kitchen knives, and an assortment of others, all of my knives are now sharper than when purchased. It’s fast and certainly effective.

I live in Texas and yes, big learning curve on real Texas brisket. No doubt. Took me literally decades to where I could brag about it. My question now, what brand hair spray do you use?

Also, clue ya in. The rub we use in Texas is salt n pepper and that is all. The Korean red pepper sauce? Ha. Get ya shot in hill country. Stall?……. Cumon, the stall usually does not start at 145, typically more around 160 , n the ends are not the burnt ends, it’s using the cap and a bit of a process to make them. Chef, seriously… not impressed with with the spin. I’m also a foodie, (or I wouldn’t have stumbled on your video) certified food judge n also a chef. Probably the last video of yours I will ever watch as I think your food is good, more basic than you make it. Nothing special chef. Btw, what restaurants did you own or which ones were you head chef at? My gut says your more actor than chef. I hear the acclaimed stuff. Who? Man, I want some of that hair spray.

I have a few Kanso knives, these handles look similar. I've found the Kansos to be very comfortable.
