I've used the baking soda/Elmer's glue mixture for snow before but found that it tends to yellow over time. I've started adding a bit of white paint to the mixture, and that seems to help.

good old paper mache, never lets me down. Awesome job with the pumpkin but maybe try a balloon, it helped me out with one of my video " DIY spider". Then you can always try making it look more pumpkin. =D
