I have been looking for a low carb cake that was good for a while now, and everything I'd tried till now were duds. This recipe did NOT disappoint! I used 1/3 cup monkfruit/eyrithrital blend. My batter was very very dry, not wet at all like in the video. I added 1/4 cup water like another commenter suggested and it was still very thick, so I added about another 1/2 cup water and 2 TBS cream. I baked mine as cupcakes at 350 for 20 mins and they turned out amazing. I did scoop out some before adding more water to see what the denser dough would do and the cake with less water was a bit denser but still very soft. The more liquid batters texture turned out more like typical extremely soft box cake, so depending on your preferences the additional 1/4 cup is sufficient. I used my own fav keto buttercream and I am so happy. I am freezing half so hopefully that will work for when the sweet tooth hits. Thank you for the great recipe!
