Ntaive food crops in India, especially the wild plants that are foraged are/were a great source of protein and micronutrients. Why is the solution only moving towards more processed mock meats? It's not about protein per say, it just about providing a funnel to capitalising on the idea that might work in the west.

Chicory is additive in coffee and not adulteration in coffee. Chicory is clearly mentioned on packing it enhances taste of coffee and reduces caffeine content in coffee. Chicory is made from chicory root which is naturally grown in regions of Gujarat. It has its own benefits.
