Benji, if you want to sweeten your adobo, you can also try adding pineapple juice or a sprite/7up instead of water. That was my favorite adobo growing up 😁

Hahaha!! You don't stir the vinegar right away because you want it to evaporate the acidity otherwise you will end up with a sour adobo with such a strong vinegar taste like you did before. You let it evaporate about 10 minutes then cover it, simmer another 10 before you mix

*When making adobo, you shouldn't stir the meat once vinegar has been added because the vinegar tightens the meat, preparing it to work with the soy sauce and develop a rich brown color... Love the way you honor Mama, Benji. Is there a video of the both of you cooking together? Great job!

Just made chicken adobo aswell. I did it a little different this time with adding oyster sauce. It did thicken it up and gave it a extra flavor boost 🙌🏼

Love watching your every move when you cook, but would like to suggest the littles stay in their playroom while you're filming, so that the viewers can clearly listen to your instructions. Oftentimes we hear Leah or Bella in the background talking loudly, whining or even crying that can be very distracting. One request I have is could you please show us how to cook the dish 'Dinuguan'. Oh Benji dangit that looks sooooo good!! I wish so bad I could try all the sauces, but I am allergic to vinegar. aka no mayo, ketchup, salad dressings etc. It really limits recipe's and food choices but I adore watching your cooking videos so much!! I still say you should have a restaurant 🙂

Bechamel with cold milk works pretty well as long as u cook it on medium high and let it get thicccccck. I'd stick to boiling the pasta , it is the safest route for me xd.
