We go to 120'-130' for big snapper. Rule of thumb, the deeper the water, the bigger the snapper.

I was holding the gill plate not the gills. I completely agree with not touching the gills and it's actually good to hold just the gill plate instead of the body because you can rub the slime off and that can also kill the fish. Thank you for the comment
