The main purpose is to remove dimethyl sulfide DMS, which is a substance that is not good for the flavor of beer. In addition, some hops need to be added during the boiling process to give the beer flavor and bitterness.:)

@@jussisaarijoki828 Calandria(built-in heater) is what makes the wort boil. Adding calandria to the kettle tun is mainly to improve the heating efficiency and save the boiling time. It is usually used in continuous brewing systems.

This video presents imprecise information. The two main reasons for a prolonged boil are: isomeration of hops alpha acids to produce bitterness, then evaporating DMS precursors from very pale and less modified malts. Also boil leads to "hot break" - coagulation of proteins and polyphenols, so that they can be more easily remove if undesired. For avoiding bacteria sterilization at boil temperature is not neede, while pasteurization is sufficient (even done while mashing). Also disabling enzymes happens during mash-out at around 80°C. So those processes do not strictly require boil. Water evaporation may be desired or not and is a side product of a boil.
