The way quality has plummeted, I'd not want to make anything comparable to commercial! I only realized a few years ago evaporated and condensed milk are the same thing, but latter is loaded with sugar. Nowadays they use nasty thickeners and fillers which give an off taste/odor...plus oddly thick consistency. I'll be making my own evaporated milk in the future. Since it's sterile after cooking, I wonder how long it lasts in fridge if put in individual sterile jars. Canned foods are of questionable quality unless diy. The best part of the internet is sharing helpful info like this. Thx

Finally, a cornbread recipe that makes old fashioned cornbread. Most recipes you find try to be too fancy and loaded with sugar which makes the cornbread too sweet. This is what my mother used to make back in the 50"s Thanks!!

Hi. Thank you so much for recognizing the traditional aspect of this recipe and technique. This is the way my grandma made cornbread (as stated). I'm glad there are others with similar experiences/traditions. It seems, in general, food and recipes are just not like they used to be (my fault, too)... simple, natural, yet significant in taste. It's hard to beat grandma's recipes... maybe it's because of the emotional connection (memories) we attach to them. Thanks for taking the time to comment. Thanks for this tip. Is it going to be safe to have that paper bag inside a small oven? I am concerned about a dangerous fire if I try it.

Hi. You have a valid question and concern. I don't think a paper bag is the best option, however, it can work. As you know, in general, paper in the oven can burn. What I've been able to find is that if the oven temperature stays below 400F, it is likely OK (not guaranteed). In your case, in using a small oven, you might check to ensure the paper is not in direct contact with any of the oven coils and keep an eye on it. If you are still concerned, you might try using aluminum foil in place of the paper bag. You would have to cut a large enough piece of foil that you could shape it into the appropriate size cylinder and maybe fold it in half to provide more stability than a single sheet. Regardless, fold or crumple the adjoining ends to connect to each other to create a cylinder shape. I have not tried this method, but I think it could work with a little patience and manipulation. I think the bottom line is that if you are uncomfortable with a homemade option, it's probably best not to use it and resort to ordering the designated paper molds online if you can find them. Interesting. I also adore the crust and can't abide the thought of a single crust pot pie! At first while watching your video I thought "I'll be cutting the sides off the crust that hangs over" but now seeing you add that extra crust to your plate, I think I'll do it your way! Going to make a turkey pot pie this weekend with leftovers!

Yes, I had never heard or seen anyone allow the crust to hang, but since we love the crust, I just hated the idea of throwing it out or wasting time in cutting it into small pieces just to sit on a pan to bake separately. And if you want condensed milk, evaporate de evaporated milk with sugar. Then if you want dulce de leche, a water bath with the condensed milk for a few hours.

My family never worried about the water. It was long ago and their bread and pies and cakes and cobblers were perfect! And they never filtered their water. The only thing I ever noticed about my water here where I live is sometimes it's strong smell of chlorine, but that's just sometimes! It's not all the time. I boil it sometimes and sometimes I don't. I'm healthy.

Right. In general, I don't worry about it either. The cities where I have lived have had good water, and I haven't noticed an issue. I do know that around the world, it can be problematic, so I like to address it in case someone is having issues with their yeast. Using filtered water could be a solution depending on the issue and no other changes to the recipe resolves it. Thanks for sharing.

I baked these today after making the dough last night. I used whole grain flour for half the flour and instead of coriander, I used ground anise. These tasted just like I remember growing up. I've been searching so long for the right recipe.... I'm so glad I found your video. These will become a family tradition! ♥️

Why do keep saying most southerners .... I have had yellow cornbread my entire life.. everyone that I know and grew up around all made cornbread from the yellow cornmeal.. the grit and the crunch is what makes it cornbread. From Mississippi to Alabama to Georgia to Florida to Tennessee. Everybody I know makes yellow cornbread.

I don’t really like graham crackers that much but i really like chocolate chip cookies and peanut butter cookies!!
