Store bought pink salt as in Himalayan salt? That and curing salt are different. Celery seed is for flavor. I apologize, I don't feel like I helped you much. Or if there was a misunderstanding.

I think you are really close. The style you did is Neapolitan pizza. Totinos patented the fried dough method US4170659A. Check it out and compare. There method is a little different.

I havent cooked this pizza yet but I made the dough lastnight. I just want to warn people the step at 2:35 where you add the rest of the water and yeast I thought was a complete disaster. The dough became a complete mess and I thought it was a goner. I kept working the dough in the bowl for 5+ minutes before it semi resembled a ball, then I put it on my counter top and began kneading it and it became a sticky mess again. I kept kneading it for 10+ minutes and finally it came together in a smooth ball. I'm typing this in case you were in my shoes and about to give up on it. Keep working on it and it should come together. The times are a little off\unclear in the description and video.

Coconut oil works just like lard. Better than olive. The tortillas will be so soft, stretch and flexible.

How tall would you say is your final bread rise? I seem to only be able to get mine to 3.5” is that pretty standard?

Yeah, I think around there. It also depends on the size of your Dutch oven. The wider the base, the less rise. If you want a taller bread, use a smaller Dutch oven.

I used my fingers to create the shape. I don't like tossing dough in the air, flour flies everywhere haha.... I like using a 50/50 mix of flour and semolina flour as my bench flour. Hope this helps.
