Removing the seeds from the peppers gets rid of the spice. We like ours with a bit of a kick so we kept the jalapeño seeds but that’s optional.

@mfcookin I ended up going way off the rails, used Jalapeños, added yellow and orange peppers, added spices, paprika and garlic powder, some white pepper, salt, ended up being too spicy for some of my family. Obviously I'm a rebel and can't follow directions 😂

I have always made Dirty Rice this way (adding raw rice to meat and veggies and then add broth) with no complaints. I have recently noticed many Dirty rice recipes that add cooked rice to the meat and veggie mix. What is the difference as far as taste and or texture? Which is traditional?

Traditionally, in New Orleans, we use raw rice. If the rice is already cooked before adding it to the meat and veggies most likely it wouldn’t hold much flavor and could possibly become gummy if overcooked.
