Absolutely safe. Restaurants cook chicken breasts the same way; hot water defrost, pat dry, season, cook to 165°. Sometimes chain restaurants ship pre-seasoned breasts frozen in a bag. They just boil the bag, plate, serve.

Thank you so much for this great video! I’ve been wanting to try making birria tacos, ever since the ones I tried at a local mom and pop Mexican restaurant left much to be desired (they were dry and bland). Problem was that I didn’t want to spend $40+ to make the tacos, as every recipe I’ve watched on KZbin calls for multiple types of dried peppers, plus multiple different cuts of beef, which adds up to a pretty penny. These recipes made it seem like it was IMPERATIVE to make Birria with all of those ingredients….so I felt like I’d have to save it for a special occasion or something….which was a shame, since I only wanted to make Birria for two, not a whole army! I was actually searching for what to do with the trimmings from two racks of spare ribs that I had in my freezer from weeks ago when I found this gem of a video. You gave me the idea, (and most importantly, the foundation/base recipe) to simply use mostly what I already had on hand to make Birria tacos. Already had the rib trimmings….a small can of chipotle in adobo….onion, garlic, bay leaves, mozzarella, etc. I thought, whats the harm in trying to tweek this recipe with additional ingredients from traditional Birria videos, substituting the multiple varieties dried peppers instead for just the canned chipotle adobo and fresh Serranos as shown in this video…and just using the meat I didn’t have to spend extra on and already had? It’s pork…but the beef bullion (that I also already had) is a creative/effective touch! Anyways, to try to cut this essay short, all I had to buy to add to common kitchen ingredients and stuff I already had on hand was: serranos ($1), cilantro ($1), tortillas ($2.50) and cut the cost/work further by buying premade green salsa (the La Costena brand was fabulous for this and was only $2). That’s less than $7, and It came out absolutely amazing! The next morning my picky brother was saying he wanted them again, and when I said there weren’t any leftovers, he asked what I need to make it again 😂. I’m not claiming that the Birria tacos I made were traditional…but they were damn good and 100x better than at the authentic Mexican restaurant I tried, while still having that authentic tasting (imo) flavor profile, while being simultaneously spicier than I’d anticipated (which was a good thing as far as I’m concerned). Also, had 3/4ths of the consume left over…which I froze and will just be “recycling” to make Birria again in the coming weeks or whenever I have spare beef or pork. Thanks again for the creative recipe, and also for reminding me that in cooking, any dish is how you want to make it.

Bro it is so so hard to screw up beef ribs. I’ve cooked a Wagyu brisket a couple weeks back and had beef ribs cut into 3 inch sections because that’s all they had at the place I went to. I left them on the whole time and they were still good and not dried out which is ridiculous

Sometimes a brisket cook can piss you off because it’s so much work but it’s always worth it. Sometimes when I really don’t feel like trimming shit I just go with a chuck roast and it’s just as good if not better sometimes than brisket. Same as beef ribs it’s hard to fuck up
