Use a website like PlayAsia to purchase eShop codes. Amazon Japan is a cheaper option but there's a couple of hoops you'd need to jump through.

When searching, click the "英字" button and it'll switch to romaji/latin letters.

There are some websites that sell eShop gift card codes. It's also fairly easy to buy them over a site like Amazon Japan with a forwarding address registered while using your foreign credit card. (Don't worry, they won't need to send anything if you're just buying a digital code.)

At around 8:00, I show a way to mitigate input lag. Any issues beyond that is probably not on the Switch's end, so I'd recommend seeing if your TV has any way to decrease latency, like a gaming mode or something.
