Because it’s pretty easy to twist off one side with your hands. You could do it on both sides though.

I imagine Rex 121 would be like Maxamet in that you really can't sharpen it at a low grit. If you have to use a coarse stone then you pretty much have to restart and raise a new burr on a finer stone. I use DMT stones and I do 99% of my work with Maxamet on the 600 grit. The 325 is okay for reprofiling but the 220 absolutely will leave you with a bunch of micro chipping. Once you get a new edge on it and get it fully sharpened it should be like Maxamet where it barely needs some light maintenance work which can be completely done on just a medium 600 grit and 1200 grit stone. It seems counterintuitive because most high carbide steels are better with a toothy edge but that's low hardness high carbide (think S90V and s110v). Ultra hard high carbide stuff like Maxamet and Rex 121 do best in the 600-1200 grit range and I get the best balance of edge retention/toothiness with a 1200 grit (9micron) stone and an 8000 grit (3 micron) polish on the strop.

I bought the G10 model. It's like a Caly had a baby with a para 3. The Caly/Para 3 lovechild. Better than the P3 IMHO, I love the Caly so it's a welcome addition and the ergos are really really good. I also love the leaf blades, a surprising and enjoyable cutter. Safe to say I quite like the Sage. The Rex is done well, the whole package has Taichungs extra attention to blade finishing. Love my Taichungs. I stropped the factory edge with 3um gunny and it did make it crisper. Cheers for the fingertip under the tip tip.👍

Rubbing Alcohol takes sharpie off with zero effort. It's an alcohol soluble ink.

Even when I can’t see any sharpie left on the blade after sharpening I still wipe it with rubbing alcohol and it’s a weird little joy when I see that diluted purpleish black on the paper towel.

Why does every sharpenjng vid show sawing back and forth on the blade. This introduces uneven metal removal. One should sweep from heel to tip an even number of times until a burr is raised then flip and sweep the blade the same number of times until a burr is raised on the other, then change grits.

I use a large torx socket to punch them out. Can't remember the size but if you have a torx socket set you'll figure it out, or just Google it like I did the first time.

28 degrees is high, as you well know. Surprised you didn’t lower it some to make it a little more slicey. Of course, Hinderers aren’t slicey no matter what you do. And they come super dull. Pocket jewelry for collectors, but not a good EDC by any stretch.

I usually don’t modify factory angles unless there is a reason or requested by the owner. This one needed to look factory original.
