Dip the bird in your oil before turning on the gas and get it right to the point it just barely covers. Then start the flame. If it is above the fill line you need a bigger pot.

I'm an old Cajun and videos like this boil my blood. These fire people violate every rule of frying safety. Even frying chicken on your indoor gas stove. I've been frying turkeys longer than this reporter and firemen have been alive. I would expect firemen to teach fire safety not fire stupidity. There are several steps I teach to avoid situations like this but there's ONE SAVIOR STEP and fire people know it but NEVER TELL YOU. Got to protect them phoney baloney jobs. If you screw every safety step to avoid a fire the ONE STEP TO AVOID A FIRE IS, BEFORE YOU LOWER THE TURKEY INTO THE HOT OIL IS TURN OFF THE PROPANE. NO IGNITION SOURCE, NO FIRE. Why don't fire departments not stress this. Almost like they want fires. Good for business.
