I have a Lightkeeper V2 as well. The Cab M+ sounds GREAT with it, so is there any reason as to why I would go with the newer Opus over it?

Interesting. Would be helpful to know what you are plugged into and how you are plugged into it as that has a substantial impact on the sound.

What is the best-way to Power this pedal? Does it come with an Adapter? How many mA does it require?

The Beekeeper comes with an adapter. Power requirements - 12VDC@500mA.
