I’ve found that Bodaimoto style nihon shu, especially Gozenshu Nigori with its rich, sour, umami-forward, and gamey flavors pairs very well with pizza and Italian food in general.

It's a matter of opinion, or taste, but generally speaking, about 1/3 full is standard in any wine tasting or fine dining setup.

In my experience, truly great Rose wine is harder to find than great white or red wines. In all my years, I can only tell about a few truly great Rose wines. The one I'm loving right now is the "Love Now" by Maison Marcel. I got my bottles at the Grocery Outlet in Jackson Ca. and I can't say enough about this wine-- Simply the best Rose I've ever tasted! I had to go to their website to find they included both white and black Muscat grapes. The freshness of this wine can't be overstated-- I feel I should go back and buy EVERY bottle they have!

I was wondering if when filming your show if you let the wine breathe once poured , but edit out that time so we aren’t sitting around for 15-30 minutes, or do you just tilt the glass right away? I personally like to try it right away then see how the flavor differs a short while later.

While prosecco generally isn't very interesting, though cheap, Italy has something way more sophisticated to offer. And that is Franciacorta. What a wine. Forget about Cava, Creman and other Sekt wines, you can legitemately compare Franciacorta directly to Champagne and the outcome isn't always easily predictible. But it is also quite expensive, at times even more expensive then a champagne from the same league. So I usually prefer spending my eurocents on the latter.

Marc - if Sauvignon Blanc is the white version of cab sauv, why is it in chard bottles rather than cab bottles? does it matter?

Hi Mary, the bottles are actually a hybrid of Bordeaux and Burgundy shaped-bottles. Bordeaux bottles have the round shoulders and Bordeaux have those sharp angled shoulders. In a region of the country (Loire) that doesn't really have it's own style, they just borrow from the other regions. And no, it doesn't really matter. It's more a stylistic choice by the winery.
