Welcome to GTA5 First playing fun. There's no wrong way to play if you're having fun. I'm catching this episode two weeks old so I haven't any idea where you are in the game, or what you've learned. Only one KZbinr mentioned it's time dynamic. Resting advances time and very few missions require night scenes. Everything is easier and better in daylight. There's no advantage to driving fast unless it's a timed event. Draw dialog out as long as possible by going slowly. Play how you like and disregard negative remarks.
