why dont my seaweed noodles expand? I left them in cold water for over 2 minutes and they’re still hard and swiggly :/ please help!

Hi, they’re not meant to expand. The texture will be on the harder side and they’re crunchy when you bite them

2 leaves, smaller on top slightly over lap, start at the stems make a stronger Zongzi pyramid. Prewash shrimp and mushroom to save the soaking water for precooked rice, it is easier for wrapping.

Made today, great recipe. I slightly undercooked my Jam thinking that it would thicken up and harden a little when cold. I was able to put it in the oven at like 60-70C for 30 mins to take more water out of it. Then I added 1-2 teaspoons of desiccated coconut to absorb more water. I have made this with a batch of Pineapple + Red Dragon Fruit, the color and flavor is amazing. Next I will experiment with Kaya filling

I have given up making yellow rice or coconut rice in rice cooker after much failures. It just doesn't work regardless how much youtube tried to convince you. It ALWAYS left me with HALF COOKED and BURNED rice. I have a high-end rice cooker too. Anyway, I switched to steaming and it came out great 100% all the times.

Galangal is a root that we use a lot in Indonesian cooking. You can normallu buy it in powder form in Asian groceries.

3.33 cups white rice, 4.5 cups water, ~1.6 oz coconut milk powder but I don't know how much that would be in terms of coconut milk from the can. I've made this recipe before with, I think, half a can of coconut milk and IT'S DELICIOUS! Love it with some toasted peanuts or fried shallots. I hate how most online recipes leave out the galangal powder but it really makes a difference. I had to search hard but found it at a middle eastern grocery store.

Use monk fruit sweetener or swerve to replace sugar. This could then be low carb sweetener

Hi there, yes i learned this from my Grandma but tweaked the recipe to my preference :) Since it's got to be boiled, baking paper won't work unfortunately

yes, you can definitely use pandan extract. I would start with 2-3 drops and mix it into the batter, then see if the colour is green enough to your liking.
