Maltose might suit you. It is a starch and id does form a transparent solution but it will likely be a yellow color.

Since the equation uses a change in temperature (Tfinal - Tinitial) the units for temperature can be either Kelvin or Celsius.

This video shows the calculation for the Enthalpy for the reaction, but the Gibbs energy is actually positive for this reaction (~102kJ)
