@@OMAKASE-JAPAN country not city because you're wrong in this case. France is the country with most michelin starred restaurants in the world. I agree Tokyo is the city with most 3 stars (12) and not by far from Paris with 10. 626 in total in France compared to 414 in Japan is a massive difference. Also France holds 30 restaurants with 3 stars compared to 20 in Japan.

In my opinion, a restaurant in a region that imports ingredients from all over Japan is no different from a restaurant in Tokyo, so I think that a region should create its own unique sushi. In this sense, Tenzushi in Fukuoka and Komatsuyasuke in Kanazawa are examples of such restaurants. I can't image much sushi that is unique to Hokkaido. Sorry, I can't help you.
