Fantastic food quality! The best Mexican style food, very authentic cuisine. Be hungry when you go, the portions are gigantic.

But the video doesn’t include a noise and then a pause before the fire; rather the fire comes before the hissing sound. How does that help?

The pause in this instance was 25 minutes between the growl the dragon made initially and then the growl just before the fire. The dragon may also have a motion sensor in its mouth that may pause the fire until that sensor is cleared.
