If you use less of the Morton kosher salt and use the appropriate amounts in a dish, does it have a good flavor. It is a good bit cheaper than Diamond in Europe so I`m thinking of trying Morton first.

A bit late for comments on this topic - just found you - but I "turn" wooden objects and one of the favorites is the French pin. Mine are normally 22"-24" and 2-2.5" in diameter. Using this in my own kitchen, I can "feel" the thickness of the dough much easier than with my "mother's" old American pin. When I transfer rolled out dough to a different place, the French pin drapes the dough easier and makes the move so much simpler. I keep my "mom's" American because it was hers, but I use the French pin not only because it's mine, but it works better. My wife likes it more, as well.

You're not supposed to cook the zucchini, unnecessary frying is classic Americana, take an Italian dish, destroy its ability to have the proper texture, increase calories, reduce nutrition etc. Lightly salt the zucchini and allow the slat to remove excess water (which you can keep and use later). I left at this point as it's already wrong. Hope I helped though.

King Arthur is excellent . I started using for several reason a few you mentioned & its an employee owned company. If you have a BJs membership in NJ you can get a variety of King Arthur flours for a great price . Very interesting video thanks .

Thank you so very much for calling out the amounts of each ingredient as you use it. I am just learning to cook, and when I have to go back and forth between another website getting the amounts straight then trying to follow the technique it gets really discouraging. I once asked another host if he would just say the amount with the ingredient and he ridiculed me and so did many of his followers, calling me lazy and was I too good to lift a finger, did I want him to make it for me...and other really unkind names. So thank you for taking an extra second. Plus there wasn't this blaring music going constantly 🙏🤷♀️

You could use 2-3 tablespoons of sugar and see if that makes a difference for you. Four tablespoons equals 1/4 cup but that seems like too much to me. Hope this helps you. -- Andrea

Thank you - this was just what I was looking for. One question, the lengths you measured were 10" and 20.5" (US and FR, respectively). I'm curious, though... How long is the patch of the French pin that is in contact with the surface? (since it tapers, the entire length could never be in contact with the surface, right?) Or, when using the French pin is one supposed to bring the narrow sections in contact with the dough, too?

Excellent question! I had to measure my French pin in order to give you an accurate reply. My pin is 20.5 inches long. There are 16 inches of the pin that are flat to the surface when I roll it. It is only a few inches on either end where there is a taper that does not touch the surface. The narrow sections would not be able to touch the surface. I hope this is an adequate reply for you. Sugar is not necessary in this bread recipe. However, I sometimes add about 1/4 cup of honey for a bit of sweetness.

Here's my method -- I form the dough into balls and set them on a sheet pan. I freeze them and then place in a ziplock to use as needed. I have never frozen the entire dough mixture. However, it is ricotta and I would expect it to freeze well and defrost easily. Experiment and let me know -- thanks for your comment.
