Sure! You can definitely roast them without foil. Just place the garlic and onion on a baking tray. If you have a microwaveable bowl, you can invert it over the garlic and onion (we use foil to make steam and bake faster) If you don’t have a microwaveable bowl, just lay the garlic and onion on a baking tray & roast, you might notice a bit more caramelization and browning, so be sure to keep an eye on them.
