Is it possible to do one press and it will continuously grind until the end of time set? For using a dosing cup instead of portafilter

Hey Sam yes it is. If you use the third button (the star) to scroll across to "Continuous" then when on that page you press and hold the first and third button at the same time you can enter settings. Scroll with the star over to "Stop and Go" and change it to off. This will allow the grinder to run until the dose is complete even if the trigger is released

SUPER precise. We measure our water output multiple times a day and it is incredibly accurate in gr and oz

As far as the technology and options for baristas yes. The Racer features a multi boiler system while things like White Eagles by Victoria Arduino are Single Boiler which limits the ability to change temperature and pressure between different heads.
