Don’t put olive oil in your salsa. That’s not an ingredient you’d use in Mexican cooking and the flavor isn’t good for it. Try canola oil if you really want a smoother texture and sheen. Another trick is to use Mexican squash.

I’m 65 ,Male, Mexican/American. I was in the Mexican food business all my life and my opinion is that y’all did a very good job! Those tortillas, you really should try adding the lard to the dry ingredients and as you would do with homemade biscuits, work the lard in to the dry ingredients. Do this by hand. Also after turning out your dough knead it please for at least 10 minutes. By hand. Let rest in a warm area of your kitchen then form your balls. Let rest at least another 7-10 minutes then you can roll them out. You definitely got game there, home skillet! Provecho!

As you use the kettle, it will seal and you shouldn’t have smoke out the side’s. Or if you have no patients but a seal kit. Great video

Worth it. Carnita leftovers are the best. i would make it like this 1 day ahead.
