There is no real indirect side but the low temperature side is the left side. It can work as indirect and I’ve done it successfully on many cooks. Since the main heat source is in the middle it only makes sense to move your meats to the side for lower temps as the 850 doesn’t have a balanced temperature on the grill grates. The best is to cook low and slow and use the left or right side for as indirect as you can get. The left is the lower temp side compared to the right side. Hope this helps

Doesn't matter equipment it's all about technique and skill. I cook everything on a 15$ portable grill. Always comes out bomb 💯😎

So the pit bus temperature fluctuation It is by design. It drops the temperature in order to get a dirtier burn so that you can get more smoke and then ramp it up to clean it out. It takes a little bit longer, but you get a lot better smoke.

I’m not 100% that is accurate, the temperature swings and inconsistencies on the grill plates are due the auger system, you can buy an aftermarket shield cover for the fire pit and it balances the heat throughout the smoker:

100% incorrect. This smoker does not have a "P" setting. The Gen 3 controller has a "P" setting on the larger Pro Series grills, but not this Gen 2. The video creator is, unfortunately, 100% incorrect. Refer to the manual for what this setting actually does.

Question, we just bought the 850 PB smoker and need additional help programing the thermometer probe that you can plug into your phone. Do you have a tutorial on using your phone for temp? TIA!

So there use to be a smoke it app you can connect via Bluetooth but now it’s just the pit boss app. You can download it and then find your smoker and link it. I will make a tutorial soon for you! Hope this helps

@@joeking9933 real quick the p-setting isn’t a smoke setting on the pit boss pro series, it’s meant to control temperatures depending on weather conditions and you can either adjust your p setting up or down so the temperature doesn’t fluctuate and it doesn’t affect your smoke levels. Your best bet is to smoke and set your pit boss pro series to anything under 225 to smoke your meats. If you need more smoke flavor, try changing pellet brand, buy a smoke tube, build a cheap smoke box and add wood chips and charcoal into it. There is several ways to produce more smoke flavor. Visible smoke isn’t always the best smoke. The clean smoke you can not visibly see and it’s doing its job and giving you a smoke ring and flavor to your meats. Hope this helps

You see there’s a difference from a good ol homemade burger with minimal ingredients but big flavor vs buying a burger like let’s say five guys burgers and fries where they pile up of the ingredients and the flavors get lost! In my opinion a great tasting burger you must be able to taste the different elements of the burger without having to guess or wonder what flavors they are

Honestly the easiest way is pellet tubes. I usually have layers of pellets in them depending on the flavors and meat i smoke. I even use thrm on my gravity feed MB

Watched so many videos on this. Have made this exact sauce a few times now. You can amp it up by using some block Italian Parmesan from Italy. And substitute the jalapeño for aji Amarillo hard to find though (we just had a new Latin market open that has them in the frozen section). Anyway great video
