Honestly, I look at the food and it's prepared in the pretentious "Europeanized" fine dining style. In reality, you will never see Filipino food prepared that way. By the way it's prepared, does it really make it Filipino Food? It kinda still implies that the original authentic way of making Filipino food is not up to Michelen standards, which annoys the heck out of me. Italian, French, CHinese, Japanese, and Indian food can still hold their own and get that star, yet Filipino food has to compromise itself for Michelin approval? Nah, it's a pass. Michelin can stick those stars up their...

If it was invented in Taiwan, then by your own logic of appropriation, the rest of Asia appropriated it ... culturally. Youre big hypocrits if you say all of a sudden it belongs to all of Asian. It doesn't. Other countries just took it, did what they wanted with it, and did so for profit. Why should they be able to do that, but not Caucasian people? We invented just about every piece of modern technology you can think of but it didn't stop Japan from exploiting our television invention to cash in. We don't ask you to stop using trains, or cars, or phones, or buses, or planes , or the internet ... and we don't try to stop you or complain when you take those things and do what the hell you like with them, without the slightest thought of what culture that came from. We are very much a people ... many peoples ... and many cultures, and very significant and influential ones at that. IIt seems when it comes to cultural approapriation, what's ours is yours, and what's yours is yours. You are hardly fair minded, and we are just about sick of our tolerance being taken for granted, as our own cultures and pride are spar on by all who benefit from it.

Congrats to the owner of the restaurant for getting a Michelin star. But just a disclaimer though that this isn't considered a traditional Filipino dish if you are looking for one. This is too much adulterated. It is not too consider a representation of authentic Filipino dish. The food have a severe IDENTITY CRISIS.
